Day 1
- In a clean jar, combine 2 tablespoons of grated ginger with 2 tablespoons of sugar.
- Add 2 cups of filtered water and stir well to dissolve the sugar.
- Cover the jar with a cheesecloth or a clean cloth secured with a rubber band to allow air to flow in while keeping out dust and insects.
- Place the jar in a warm, dark spot, ideally between 18-24°C (65-75°F).

Days 2-7:
- Each day, add 1 tablespoon of grated ginger and 1 tablespoon of sugar to the jar, stirring well after each addition.
- Over the next 5-7 days, you should start to see bubbles forming on the surface, a sign that fermentation is occurring. The mixture should smell slightly sweet and gingery.

Day 7+
- Once the ginger bug is bubbly and active, it’s ready to use! You can now add a few tablespoons of the ginger bug to homemade soda recipes, or store it in the fridge for later use. Just be sure to "feed" it with more ginger and sugar weekly to keep it alive.
